But I was confused by accurate figures of amount (weight or volume) of needed ingredients. Will the dish be not tasty, if we add not 100 grams of sugar but 115 or 87? I do not like sugary-sweet food, so I began experimenting.
At the beginning, I added products more or less than it was needed. And then I began to change the recipe totally: I wanted to see olives in a fish cake - please, add no doubting, or add tomatoes in tomato sauce and so on. Dishes were modified out of all recognition.
Now I cook without a recipe, but very difficult dishes - only occasionally peeping, to get all the same what I want to cook.
When I am just cooking, for instance, a supper without any special planned dishes, then I do not know what I will receive. During cooking some new ingredients are appended, something is replaced, removed ... I only know what type of dishes will be, for example, a garnish with something, or some soup or pancakes ... Little things are supplemented during cooking. After all, personality of the master is determined in trifles.
To my mind, the recipes are devised only as a support for cooking. Cooking for me is not just an everyday tiresome process - it is infinitely more! This is flight of fantasy, imagination, and feeling of harmony and embodiment of our wishes in something touchable. That is why it is necessary to cook only in good spirits and with kindness.
But if you don't have enough practice in cooking, you have to apply recipe-books; otherwise you will not be able to prepare a delicious dish. A very good solution in such case is to download copycat restaurant recipes, which are composed by well-known cooks from around the world.
