I'm going to describe how you can make the batter that Mexicans use to cook the shrimp when following their beloved Baja shrimp taco recipes. This batter is used for the authentic Mexican recipe for Baja shrimp taco recipes, but I've found the batter to be so good that you can use it on pretty much any type of taco that involves shrimp with a very positive result: it's delicious! Using a bowl (cereal bowl is fine), add all of the ingredients. Mix them all really well for while, whipping out any remaining chunks of wheat flour and making sure the batter has a medium consistency (not too thick or thin): you want it right in the middle, so if it turned out a little too thin, add a just a little more wheat flour, and if it's a bit too thick, add a little bit more of your beer, then mix it all together again. Try to get it right the first time though because if you start adding a little beer and then you take it too far and then you have correct by adding some more wheat flour, and you overdo it, you start to skew the ingredient ratio and this is not a recipe you want to mess with because it is incredible as-is!
You use this batter by coating each of the shrimp you'll be using for your taco recipes in the batter and then deep frying them. The batter will caramelize around each shrimp as it cooks and you'll end up with shrimp for your tacos that taste absolutely amazing!
Again, as mentioned before, this particular batter is normally used when making Baja shrimp taco recipes but you can use it on your shrimp for any shrimp tacos, really. I think you're going to love this batter, as it tastes incredible, and if you do, you might consider trying your hand at cooking some other authentic Mexican recipes on another occasion. Enjoy!
