The best Homemade Pancakes Recipe

By Ben Cook

While a variety of mixes are obtainable in the grocery aisle, pancakes "from scratch" can not be beaten. But have no fear: basic pancakes are remarkably quick and straightforward to create, and there are several rapid and appetizing variants. There is even a site full of different pancake recipes that you could make at home.

My grandmother passed this standard recipe down to my mother and aunts. It is a household favourite.

The best Homemade Pancakes Recipe

Makes four to 6 servings. Time: 20 minutes

Ingredients: 2 cups all purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, 1 tablespoon sugar, 2 eggs, 1-1/2 cups milk *Add more milk for thinner batter if desired, as much as 2 cups total, Butter or oil for cooking

Instructions: 1. Preheat a griddle or big skillet above medium-low heat while mixing the batter.

2. Mix flour, baking powder, salt and sugar together.

3. Beat the eggs and combine with milk.

4. Add the milk and egg mixture to the dry ingredients, mixing gently. Don't worry about a couple of lumps here. Add extra milk if you favor a thinner batter.

5. Dissolve a teaspoon of butter or spread a teaspoon of oil on the griddle. This is optional for non-stick forms of griddles. When the butter foam disappears, ladle batter onto griddle, producing any size pancakes you favor. As the pancake cooks, tiny bubbles will show up and pop on the surface of the cake. When the pancake is covered with little holes and edge looks dry or cooked, it is time to flip over brown the other side. Every side must take 2 to four minutes to cook. Adjust the heat as needed.

6. Serve and enjoy!

To keep pancakes warm prior to serving, you could set them in an oven heated to 200? F for as much as 15 minutes.
