Imagine eating a slice of super delicious pumpkin bread which offers the added benefit of fruit. Well, here is a simple scrumptious pumpkin bread recipe with canned pumpkin and bananas, served alongside an apple caramel sauce that will have you licking your fingers.
What you'll need:
- 2 ripe bananas, peeled and mashed finely
- One (1) cup of canned pumpkin (drained and mashed to remove any large chunks)
- Quarter of a cup of canola oil (or extra virgin olive oil)
- 2 eggs at room temperature (you can separate the egg whites and egg yolks and use them separately)
- 2 cups of whole-wheat flour (or 1 cup of wheat flour with one (1) cup of refined flour)
- Half (1/2) cup of rolled oats
- 1 teaspoon of baking powder
- One teaspoon of sodium bicarbonate
- Half (1/2) teaspoon of salt
- Two-thirds of a cup of granulated sugar
- 1/2 teaspoon of grated nutmeg
- 1/2 teaspoon of ginger (grated)
- Half a teaspoon of ground cinnamon
Method:
- Preheat the oven to 350 F.
- Grease and flour a 9 x 3 inch loaf pan and put aside.
- Take the eggs in a mixing bowl and add the banana and pumpkin to it. Beat using an electric mixer at a low speed.
- (Note: If you're using egg yolks and egg whites separately, add the banana and pumpkin to the egg yolks and whisk. Then add the egg whites after mixing.)
- Next add the sugar and canola oil or olive oil to the mix and blend some more.
- Sift the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt and rolled oats together in a mixing bowl.
- Add the dry mix to the egg-pumpkin mix and stir well till the batter is just moist.
- Pour the batter in the greased bread loaf pan. Smooth down the top.
- Bake in the preheated oven at 350F for approx. an hour 'til the top of the bread is firm.
- Remove from the pan and let it cool before cutting in slices to serve.
Spicy Apple Caramel Sauce Recipe
This sauce is the ideal accompaniment to the bread.
What you'll need:
- 1 cup of heavy cream
- 1/2 cup of apple juice
- One (1) star anise
- 1 inch piece of fresh ginger
- Four (4) cloves
- Two cinnamon sticks
- 1/8 teaspoon of nutmeg (grated)
- 1 1/2 cups of sugar
- One tablespoon of apple cider vinegar
- One (1) tablespoon of apple schnapps
- Half (1/2) cup of water
Directions:
- In a frying pan, heat the cream, apple juice, cinnamon, cloves, ginger, nutmeg and star anise on a low heat. Simmer for eight (8) minutes. Don't stir the ingredients.
- Remove from the heat and sift the contents into a clean bowl.
- In a separate pan, heat the vinegar, sugar and water 'til the liquid turns amber brown in color.
- Slowly add the cream mix to the vinegar mix and whisk well.
- Add the apple schnapps and heat for another thirty (30) seconds.
- Take off the heat and serve warm with sliced pumpkin bread.
