Recipes For Simple Holiday Goodies

By Richard Bucket

If you are entertaining a group of people, your family, or just want to make a holiday treat that is both cheap and delicious for yourself, then take a look at these simple recipes.

Chocolate Peanut Butter Balls

To make these tempting little treats, you will need 1 cups of peanut butter, a cup of butter or margarine, 1 lb. (16 oz.) of powdered sugar, 1 teaspoon of vanilla extract, 1 cups of semi-sweet chocolate chips and 1 tablespoon of vegetable shortening.

In a medium bowl combine the peanut butter with the butter. Stir in the vanilla and the powdered sugar until it is completely incorporated.

Next, roll the mixture into 1 inch balls and place them on wax paper on a plate. The small size makes them easy to eat. To make them firmer, put them in the freezer to cool.

Melt the chocolate in a double-boiler if available, or a small saucepan over low heat, stirring constantly to keep the chocolate from burning. Add the shortening to the chocolate and mix it well. The shortening will aid the chocolate in hardening when it cools.

Take the peanut butter balls out of the freezer and stick a toothpick into each one. Use the toothpick to dip the balls into melted chocolate until they are coated. Many people leave the top uncovered so that it looks like a buckeye from a buckeye tree.

Put the buckeye treats in the freezer until you are ready to serve them.

Christmas Spice Nuts

It doesn't take much to create this delicious Christmas treat. They make for a nice protein filled snack that many will love.

To get started, preheat the oven to 300 degrees Fahrenheit then grease a baking sheet.

The ingredients are few and can be found around most kitchens. You will need 1 egg white, cup of brown sugar, 2 tablespoons of ground cinnamon, 1 teaspoon of ground cloves, 1 teaspoon of ground ginger, 1 tablespoon of vanilla extract and 1 pound of mixed nuts.

After removing the yolk from the egg white, beat the egg white until it gets foamy and white.

Add all of the spices, sugar, and vanilla to the beaten egg white and mix it together. Next, add the nuts and toss them until they are coated with the mixture.

Spread the nuts onto your greased baking sheet and place in the oven.

For 25-30 minutes, bake them in the oven and toss them a couple times so that they can be baked evenly. After removing them from the oven, let them cool off on the pan for 20 minutes. You can store them in the fridge for up to 1 week in an air-tight container.
