Fast Vegetarian Meals

Vegetarians like most people have really busy lives and the last thing they want to do at the end of a busy day is to spend an hour cooking dinner. Luckily, there are some quick and easy vegetarian meals that the whole family can enjoy that take only 15 or 20 minutes to cook.

The most obvious quick vegetarian meal is a stir fry. You can make it with practically any vegetables you like and add Quorn, tofu, soy or another vegetarian alternative to meat should you wish to do so. You can use soya sauce to flavour it, a chilli based sauce, black bean paste, five-spice or many other kinds of Chinese sauces, so a stir fry need not be boring.

If you eat eggs an omelette with a salad is really easy and quick to make. A piece of pre-made quiche accompanied, by coleslaw, some new potatoes and a salad is another alternative for those vegetarians that eat eggs.

Pasta, especially if it is fresh pasta, is very quick and easy to make and there are plenty of vegetarian sauces you can add. Make it healthier by serving it with a salad or some vegetables you have pre-roasted and stored in oil. Couscous only takes minutes to make and can be flavoured in a wide variety of ways so works well with most meals.

Pizza is a fast and easy meal to prepare and better still can be ordered from the takeaway, as can curry or vegetarian Chinese food. If you eat fish you could pick up fish and chips on your way home or quickly make it at home. All fish cooks fast, so is another food that can be used to make a quick, flavourful and healthy vegetarian meal.

Pre made tart-let cases can be used to make a range of tasty quiches or simply filled with prawns, Quorn, tofu or cooked vegetables mixed with a tasty sauce. Even a vegetarian sandwich can be toasted and served with a jacket potato and a salad to make a complete and satisfying hot vegetarian meal.

Alternatively, you can make a batch of meals that you can then simply warm in the microwave or oven when you get home. Any stew, curry, soup or pie lends itself well to this. Vegetarian shepherd's pie, lasagne or cannelloni also works really well.
