Easy and Super Tasty Bundt Cake

Another great advantage of making bundt red velvet cake recipe is the fact that they are just so easy to slice; even a thin slice can be cut with ease. Below is a gorgeous red velvet Bundt cake recipe for you to try out the next time you decide to put on your baking hat.

What you'll need:

- Vegetable oil - 1 1/2 cups

- Buttermilk - one cup

- Eggs - 2 (at room temperature)

- Red food coloring - 2 tablespoons

- White vinegar - one tablespoon

- Vanilla essence - one (1) teaspoon

- Flour - two and a half (2 1/2) cups

- Sugar - one and three-quarter (1 3/4) cups

- Sodium bicarbonate - 1 teaspoon

- Salt - 3/4 teaspoon

- Cocoa powder - 1 tablespoon

Preparation:

- Preheat the oven to 350F.

- Grease a Bundt pan and dust a small amount of flour on the inside.

- In a mixer bowl, break in the eggs and add the buttermilk to the eggs.

- Beat the eggs and buttermilk together using an electric blender till the eggs are well beaten.

- Add the vinegar and red food coloring.

- Add the sugar and beat 'til the sugar dissolves completely.

- In another bowl, sift together the flour, sodium bicarbonate, salt and cocoa powder.

- Add the dry ingredients to the wet ingredients, one spoonful at a time, and mix well between each addition to avoid any lumps.

- Pour the cake batter in the greased Bundt pan (fill three-quarters of the way).

- Bake in the preheated oven for approx. forty-five minutes or until the cake is firm in the middle and does not jiggle on shaking.

- Leave the cake to cool in the pan for ten to fifteen minutes.

- Invert on a wire cooling rack and leave it to cool for no less than one hour before applying the frosting.

What you'll need for the frosting:

- Cream cheese - one cup

- Butter, at room temperature - half (1/2) cup

- Powdered sugar (sifted) - two (2) cups

- Vanilla essence - 1/2 teaspoon

Preparation:

- Mix the cream cheese and butter and beat using a blender at very high speed until it is softened.

- Add the powdered sugar and vanilla to the mix and beat on low speed until fluffy. Scrape the sides of the bowl at frequent intervals to ensure an even mix.

To assemble the cake:

- Place the cake on a serving plate and cover with cream cheese frosting on all sides.

- Otherwise, you can melt the frosting in the microwave and pour it over the top of the cake then let it flow down the sides. Cool for a few minutes.

- Decorate the cake with chopped walnuts and then serve.
