Strawberry Vanilla Pancakes

This particular pancake recipe will provide you with soft and fluffy pancakes that are loaded with pure strawberries. Servings: four

Ingredients

1 cup all-purpose flour,

2 tablespoons brown sugar,

2 teaspoons baking powder,

1 teaspoon salt,

1 egg,

1 cup milk,

2 tablespoons vegetable oil,

two teaspoons vanilla extract,

1 cup chopped fresh strawberries,

Preparation:

1. In a medium container, combine together flour, brown sugar, baking powder and salt. Slightly whip the egg in a different mixing bowl. Add milk, oil, beaten egg and vanilla into the bowl of dry mixture, and blend thoroughly till well combined. Add the strawberries in the mixture.

2. Set a large frying pan or griddle over medium heat, and spread with butter or cooking spray. Spoon portions of batter into desired size of pancakes, and then drop into griddle. Fry till corners are firm and pockets surround the surface. Flip just about every pancake over using a spatula and cook the next sides until light brown
