4 Ripe avocados, pitted, 1 Cup of fresh garden tomatoes, finely-diced, Cup of Vidalia onions, finely-diced, Cup of radishes, finely-diced, Cup of banana peppers, finely-diced, 1 Tbsp. of jalapeno peppers, finely-diced, Cup of fresh cilantro, chopped, Cup of fresh parsley, chopped, Cup of chipotle, finely-diced, Cup of red bell peppers, finely-diced, 2 Tbsp. of fresh, diced garlic, Cup of lime juice, 2 Tbsp. of fresh tomato juice (from the tomatoes that were diced), 1 Tbsp. of red wine vinegar, 1 Tbsp. of sea salt, 2 Tsp. of extra virgin olive oil, 1 Tbsp. of cracked black pepper, 1 Tsp. of granulated sugar

Instructions

Inside a medium-sized mixing bowl, mash the fruit of the avocados until a creamy mixture is created. Mix in olive oil, granulated sugar, red wine vinegar, plus the tomato juice and stir well. Add the lime juice and stir till mixed in.

Inside a separate, small mixing bowl, add the onions, diced tomatoes, radishes, banana peppers, jalapeo peppers, cilantro, parsley, chipotle, and garlic. Stir these until mixed lightly and pour whole mixture into a blender or food processor. Blend for a few seconds until the mixture takes on the form of a sauce. Pour this mixture into the bowl with all the avocado mixture and stir using a spoon or fork for one minute till properly mixed. Add the sea salt and cracked black pepper and stir.

This spicy Jamie Olivers guacamole recipe is loaded with freshness and authentic Mexican flavor and may be served at parties as guacamole dip, an appetizer, salad topper, or by itself. It will serve 10-12 people and works terrific with tortilla chips or spooned over crusty bread topped with Monterey Jack cheese.
