Delightful Vegan Pizza

For those people who haven't had a vegan pizza recipe with no cheese, it's not as daunting as you might think. All the other parts are still there - a flavorful sauce, soft homemade dough and some delectable toppings. Experiment around with pizza toppings to make your own healthy vegan recipes.

Prep Time: 30 min. Cooking time: 30 min. Time from start to eating: 1 hour. Makes enough for 2 medium pizzas.

Healthy Vegan Pizza Recipe Ingredients:

Pizza Dough:

1 cup whole grain flour

1 Tbsp yeast

1 tsp salt

1 Tbsp olive oil

1 cup water

BBQ Sauce (see below)

Toppings:

Tempeh, cubed

Red pepper, diced

Tomato, diced

Handful of spinach, chopped

1 tsp olive oil, or less

pinch of sea salt

Healthy Vegan Pizza Recipe Directions:

1. For the dough, combine the flour, salt and yeast in a bowl. Make a well in the center of the flour mixture and add the oil, then the water. Bring the dough together. Add water or flour as required to make a soft dough. Knead for at least 5 minutes, and then press or roll out into pizza-based shapes.

2. Sprinkle some corn flour or coarsely ground millet on a baking sheet, and place the crusts in the oven at 400 degrees F for at least 10 minutes, or until they start to get a lighter color.

3. If you don't have time to make your own dough, use whole wheat pita breads.

4. For the meantime, chop the vegetables. Set them in a bowl, mixing them with a small amount of olive oil, and salt. Take out the pizza crusts from the oven, top with the bbq sauce, then the vegetables.

5. Place the pizzas back in the oven for about 20 minutes, or until the vegetables are soft.

Healthy Vegan BBQ Sauce Ingredients:

1 Tbsp olive oil

1 onion, chopped

2 garlic cloves, crushed

4 Tbsp brown rice syrup or unrefined sugar

2 Tbsp molasses

1 small can tomato paste

1 cup apple cider vinegar

1/2 tsp ground coriander

1/2 tsp dry mustard powder

1/4 tsp ground cloves

1/4 tsp allspice

1/4 tsp ground cardamom

1-2 tsp sea salt

1 cup water (approx)

Healthy Vegan BBQ Sauce Directions:

1. Heat the oil in a pot and saute the onion until soft, then add the garlic and saute briefly.

2. Add the rest of the ingredients, adding water if you need to for your desired consistency.

3. Bring it to a simmer and cook for 20 minutes. Let it cool, and then puree if you wish, or leave the onions whole.
