Yummy Banana and Coffee Cake

Banana cake recipe is a particularly nutritive fruit and is thought of as a great 'dietary snack ' as it is loaded with potassium, magnesium, vitamin B6 and B12. It is good when eaten raw and even cooked. Banana is rich in sugar and, consequently, makes delicious desserts. Below is a yummy banana coffee cake recipe which you can prepare at home and enjoy with your evening cup of coffee.

What you will need:

- All-purpose flour - 1 1/2 cups

- Cocoa powder - one (1) cup

- Sodium bicarbonate - one (1) teaspoon

- Salt - three quarters (3/4) of a teaspoon

- Bananas - two (2) (peeled and mashed)

- Sour cream - half (1/2) cup

- Butter (softened) - 1/2 cup

- Brown sugar - one (1) cup (packed)

- Eggs - two (2)

- Instant coffee - one tablespoon

- Water - one teaspoon

- Vanilla essence - 1 teaspoon

Method:

- Grease a 10-inch baking pan.

- Pre-heat the oven to 350F.

- In a mixer bowl, mix together the flour, cocoa powder, salt and sodium bicarbonate.

- In a new bowl, mix the bananas and sour cream.

- In another bowl, take the butter and sugar and beat them at top speed 'til fluffy.

- Add the eggs in, one at a time, and beat well after each addition.

- Add the banana and sour cream mixture then beat well to incorporate everything.

- Add the vanilla essence.

- Add the flour mix to the wet mix, one spoon at a time, and beat well after each addition.

- Pour the mixture in the greased baking pan.

- Bake in the preheated oven for 45 minutes.

- Take out of the oven and cool before serving or decorating.

Frosting for the banana coffee cake: Banana Butter Cream Frosting

What you will need:

- Butter - 1/4 cup

- Salt - 1/8 teaspoon

- Mashed ripe bananas - half a cup

- White vinegar - quarter of a teaspoon

- Confectioner's sugar - 3 1/2 cups

- Chopped walnuts to decorate

To prepare:

- Beat the butter and salt together.

- Add the bananas and vinegar and beat well to get a smooth mix.

- Beat in the confectioner's sugar, one spoon at a time, until you get a nice fluffy and smooth frosting.

Decoration:

- Take the cooled cake and slice it horizontally.

- Place the lower half on a serving plate and spread a layer of frosting on the top. Sprinkle some chopped walnuts on top.

- Place the other layer of cake on top. Press down lightly.

- Use the remaining frosting to cover the cake from all sides.

- Scatter the remaining walnuts on top to decorate.

- Cool the cake for a short while to let the frosting set before serving.

- Cut in slices and serve with a fresh cup of coffee.
