Scrumptious Recipe with Banana, Strawberries and Chocolate Chips for Vegans

Bananas, chocolate chips and strawberries fall among the favorite food items of kids all over the world. When these flavorsome ingredients are mixed with healthy items like oat flour, wheat flour, nuts, flaxseeds etc, it makes an ideal mixture for a healthy banana bread recipe. Here are two tasty variations of a vegan banana bread recipe that is bound to make you the star cook of vegan recipes.

What you will need for strawberry banana bread:

- Ripe mashed bananas - one cup

- Sugar - one cup (you can use a mix of brown sugar and white sugar)

- Olive oil - two (2) tablespoons

- Vanilla extract - 1 teaspoon

- Water - quarter (1/4) cup

- Ground flaxseeds - two (2) tablespoons

- Oat flour - half (1/2) cup

- Wheat flour - 1 1/2 cups

- Baking powder - 1 teaspoon

- Baking soda - one teaspoon

- Ground cinnamon - one teaspoon

- Soy milk - quarter (1/4) cup

- Lemon rind - one (1) lemon

- Diced strawberries - half (1/2) cup

- One (1) strawberry sliced thinly

- Apple cider vinegar - one teaspoon

- Walnuts and Almonds (sliced) - one (1) cup

Preparation:

- Preheat the oven to 350F.

- Use vegetable shortening to grease one 9x5 in. bread loaf pan.

- In a bowl, mix the oil, soy milk, lemon rind, vanilla and apple cider vinegar.

- Beat together at low speed using an electric beater until they are well emulsified.

- Then add the mashed bananas and diced strawberries to the mix and blend well.

- In a fresh bowl, sift together the wheat flour, oat flour, bicarbonate of soda, baking powder and ground cinnamon.

- Add the flour mix to the wet ingredients and mix well.

- Then stir in the sliced nuts.

- Pour the batter in the greased baking pan and smooth out the tops.

- Place the sliced strawberries on top.

- Bake in the pre-heated oven for approximately thirty (30) minutes.

- At the end of thirty (30) minutes, cover the bread with silver foil (to prevent the strawberries from turning brown), lower the temperature to 320F and then bake for another thirty (30) minutes.

- Remove the bread from the oven and leave it to cool down overnight before cutting in slices to serve.

What you need for the chocolate variation:

You need to replace:

- Strawberries with half a cup of vegan chocolate chips

- You must also exclude the lemon rind

Preparation:

- Add the chocolate chips to the batter at the end with the nuts.

- Bake in the preheated oven at 350F for approx. 1 hour and 20 minutes. Check by inserting a toothpick in the center; if it comes out clean the bread is done.

The banana bread should be moist in the middle and because no milk products are used in the recipe, you can store the bread in the fridge for up to two (2) weeks.
