Healthy diet choices abound in the world of seafood. Eating fish has many health advantages but it can often be difficult to prepare properly. It can be both overcooked and rubbery or simply just too fishy. Simple recipes are generally best. Perfect seasonings and correct temperatures in the oven or grill can make a huge difference on how a recipe ends up. Buying the freshest seafood available however, is the main key to preparing perfect seafood recipes.

## Live Seafood is the best

Seafood purchased in the local store is not really fresh. No matter if frozen or thawed, the seafood available for sale is days, if not weeks, old. The products have started to degrade, losing quality and taste. For items like live crawfish and clams, seafood markets found in coastal areas can ship straight to the client. These types of markets are best suited for those wanting the freshest seafood.

## Fresh Seasonings

Use fresh herbs, grind whole spices and mill fresh flours when preparing seafood recipes. This will likely ensure each dish has the best possible flavor. Real butter and cream will add a refreshing element to soups and stews. Avoid using packaged seasoning packets for seafood. These are usually inferior in quality and can result in less than satisfying meals. In season vegetables and fruits should also be used to enhance the flavor of fresh seafood.

## Perfect Pairings

Select the right wine to match your favorite seafood recipes. White wines are generally best for your seafood dishes. Try pairing a sparkling wine with fried seafood or a crisp Pinot Grigio for simpler recipes or those containing mussels or clams. Seafood served in heavy sauces will benefit from being coupled with a rose or blush wine.

## A Sweet Ending

A main course of seafood usually requires a light dessert. Steer clear of dairy-based desserts. Dairy products do not blend well with most seafood dishes, leaving diners feeling somewhat queasy. Fruits, gelatin desserts and light baked goods make great choices for desserts. For seafood recipes served as an accompaniment, like an appetizer of caviar or one created from live crawfish, a heavier dessert will likely be fine.
