How to Make Crusty Delicious Sourdough Bread

if you are like me, you have looked through lots of discouraging bread machine recipes in search of the most perfect sourdough recipe. In my personal experience, most bread machine recipes have been fantastic, but not when it comes to sourdough. Why is it so difficult to find just one good sourdough bread machine recipe? Come here, lean in close, and I will tell you a little secret: they are not all bad. I have found a fantastic recipe for sourdough that uses a bread baking machine, and I'll share it with you under one condition: You've got to swear to share it with your mates, or at least make it for them when they ask - as long as they ask you politely, that is.

Ingredients for starter:

One and a half (1 1/2) teaspoons of yeast (bread machine yeast, or any fast active dry yeast will do)

Four (4) cups of warm water

3 cups of all-purpose flour

4 teaspoons of sugar

Ingredients for bread:

1/2 cup of water

3 cups of all-purpose flour

Two (2) tablespoons of sugar

One and a half teaspoons of salt

One (1) teaspoon of yeast

Preparation instructions:

1. Firstly, make the starter a week before you plan to make the bread. To make the starter:

a) Mix the yeast in the warm water.

b) Add the remainder of the starter ingredients and mix it all together.

c) Lightly cover this mixture in a bowl and let it sit on your counter for a week. You can tell that it's done when it begins to smell sour and contains small bubbles.

d) Now, put it in the fridge 'til you're ready to make the bread.

2. Place one (1) cup of your starter into your bread machine, then add the remaining ingredients for this bread recipe. If your machine has a precise order that it proposes for adding the ingredients, follow that instruction.

3. All machines may differ, but use whichever setting is akin to "Basic" or "Normal" setting. If your machine has a setting for crust, set it to "Light".

4. Cooking time also varies by appliance. Your machine will tell you when it's completed.

Remember, the process of choosing the proper cooking time and settings is commonly dependent upon the brand of your machine. My personal experience has been that most machines provide you with a sheet of example recipes. I usually exploit this sheet for comparative purposes and then select the settings accordingly.
