Banana bread in itself is rather filling and nourishing, yet when you mix it with crunchy and healthy oats, the taste increases two-fold and offers additional nourishment. Banana bread recipe is quite easy to prepare and can be stored for up to two (2) weeks in an airtight container. Below is a quick banana bread recipe made with crunchy oats that can be made in no more than an hour.
What you will need:
- Oats - 1 cup (crushed or full)
- All-purpose flour - one and a half (1 1/2) cups
- Brown sugar - 1/2 cup (you can use ordinary sugar, but brown sugar is tastier)
- Fresh cinnamon powder - one and a half teaspoons
- Baking powder - 1 teaspoon
- Baking soda - 1 teaspoon
- Egg - 1
- Mashed bananas - 1 1/2 cups
- Vegetable oil - 1/3 cup
- Raisins - 1 cup (sliced and washed)
- Vanilla - one (1) teaspoon
Preparation:
- Preheat the oven to 180C or 350F.
- In a deep mixer bowl, break the egg and add the sugar.
- Whip the egg and sugar by hand or using an electric mixer.
- Add the oil and whip some more so that the sugar dissolves.
- Now add the mashed bananas and fold well.
- In a new bowl, mix the flour, cinnamon powder, baking powder and baking soda.
- Add the flour mix to the egg-banana mix, a spoonful at a time, and whisk well so that all of the ingredients are well incorporated.
- Take some flour and roll the raisins in it, then add them to the batter (this will stop the raisins from sinking to the bottom of the loaf).
- Add the oats in as the last ingredient to maintain the crunch.
- Grease a 9x5 inch bread loaf pan and pour the batter in the pan.
- Sprinkle some oats on top and cook the bread in the preheated oven for 50-60 minutes. Check if it is done by inserting a knife in the middle; if it comes out clean, the bread is done.
- Take the bread out of the oven and allow it to cool on a wire rack before cutting in slices. The bread will be moist to eat.
To serve the bread:
- Banana bread tastes best served with coffee. You may even add prepared coffee to the bread batter to add to the taste.
- If you would like to eat your banana bread as a snack, simply spread some butter and jam on it and enjoy!
- This bread may also be served as a dessert by adding some chocolate or caramel sauce on the side and dusting the bread with icing sugar.
