The festive days of Diwali 2011 are swiftly approaching and your Diwali calendar must now be crammed with things to do like the greetings to send, dishes to prepare amongst other last-minute jobs. The holiday of Diwali brings with it joy and happiness for everybody as well as some fantastic culinary delights. These are some simple and inventive sweet recipes that you can prepare at home in virtually no time at all.
1. China Grass (agar-agar)Burfi(fudge)
China grass is a sort of veggie gelatin which is quick-setting. It really doesn't have any identifiable taste or smell. It is usually readily available in the form of strands and powder. Here then is what you'll need to prepare this tasty China Grass Burfi;
Ingredients:
Milk 1/2 litre
One packet of China grass strands (about) 8 grams.
Sugar 250 grams
One (1) cup water
Grated cashew, almonds, and pistachios for garnish.
Edible silver leaf for decoration
Method:
Cut the china grass strands into tiny pieces and soak in warmed water for five minutes to melt it.
Boil the milk in a pan.
Squeeze the china grass pieces to remove excess water and add the squeezed china grass to the boiling milk. Stir steadily.
Let it boil until the china grass dissolves totally.
Add sugar and stir until the sugar dissolves.
Tip the stir into a greased pan or in moulds.
Garnish with dry fruits and sliver leaf.
Let it set at 70 degrees.
Cut into diamond shapes and serve.
2. KhoyaHearts and Stars
A toothsome heart and star-shaped candy to prepare for your special ones. Here then is what you'll need;
Ingredients:
1/2 kilo of Laddoos(any type of your choosing)
Khoya ormawa (400 grams)
Crushed sugar 1 1/2 table spoon (stay light on the sugar as the Laddoos are already very sweet).
Cut dry fruits
Cardamom powder 1/4 tablespoon
Cashew nuts fifteen nos.
Ghee 2 large spoons
Method:
Grate the khoya and fry it in ghee on an exceedingly low heat for a couple of minutes.
Cool and then mix the sugar and dry fruits. Keep it aside.
Crumble the laddoos thoroughly and divide the crumble into two parts.
Spread one half on a greased pan and spread a layer of the prepared khoyaon the laddoos and then spread the rest of the crumbled laddoos overt it.
Press the spread lightly and let it set at a comfortable temperature.
Cut in heart and star shapes and decorate using cashew nuts.
These delightful formed candy will make Diwali 2011 a particularly special one for your family and with some luck earn you a lot of praise from friends and family.
