Traditional:
Ingredients
- 10 cups full fat milk
- 1/4 big spoon Alum powder. You may use citric acid (1/2 tsp.) melted in water. The goal of both is for crystallisation.
- 4 tablespoons of sugar
- 1/4 big spoon Ghee (clarified butter) for greasing
Method
- Pour milk in a thick-bottomed aluminium pan and heat on low flame.
- Keep on stirring so that it does not stick to the bottom.
- When the milk starts to thicken a little (i.e. Decreases to 3/4th of the quantity) add the alum powder to it. You'll see that it will begin to thicken.
- Keep stirring till milk becomes grainy and then reduces to a solid mass. Keep the flame on low for even cooking.
- Add sugar and mix well. You may add sugar-free to the mix for the diet conscious.
- Keep on stirring the mixture for 5 to 10 minutes more until it thickens again.
