Vegetarian Recipes: Find Out What You Must Know

If anyone is looking for an authentic Indian taste in their platter then Southeast Asian vegetarian recipes are the appropriate recipes they should have as their meals. They are simple to cook and fresh vegetables are the most important ingredient. A good sauce is a great place to start.

To prepare this meal, one needs to have very basic ingredients in hand. You need to have one tablespoon of sunflower oil, 50 grams of chopped onion, 2 tablespoons of Madras curry powder, 1 heaped teaspoon of tomato puree with 150ml of red wine, 120ml of water, 1 piece of bay leaf and pinch of salt, pepper, sugar with lemon juice, mango chutney.

The oil should be heated and the onion added until transparent. Next is the curry powder and tomato puree, which are cooked for a few minutes. Once cooked, add the other ingredients, and simmer for 10 to 15 minutes. Once cooked, it should be strained through a sieve and cooled.

Making of an ideal dish needs something extra. Good presentation with apple and celery salad gives another dimension to this dish. To prepare this you need to have 2 granny smith apples, 4 celery sticks, 1 tablespoon of plump sultanas with lemon juice and 150ml of double cream.

The peeled and matchstick sliced apples and celery and sultanas should be combined in a bowl with the lemon juice. This should be chilled for 30 minutes, before mixing in the cream, and sauce made above. It is ideal served with a sprinkle of cayenne.

You can use this sauce for cauliflower cheese dish also. You have to first cut the cauliflower into florets and also need a few other ingredients; 30g butter, half teaspoon cumin seeds, 1 pinch chili powder, 300ml milk, 50g plain flour, 1 teaspoon English mustard, 125g grated cheddar cheese and 1 green chili chopped finely.

Whilst the florets are being boiled for 5 minutes and then drained, the oven should be preheated to 180C. The butter should be melted in a pan, and then the cumin seeds, chili powder, milk and flour added. It should be thoroughly whisked until smooth, and the heat reduced.

Now add the cheese, the English mustard and the curry sauce which was made earlier. Pour little amount of this mixture in the oven proof dish. Now add the florets and spread the rest of the sauce over the florets; coating them completely. Garnish with cheese. Let this mixture bake it the oven till it turns brown. Serve immediately.

Above mentioned dishes are just few samples of delicious Southeast Asian vegetarian recipes. But you can make many other delightful dishes by using the curry sauce as its base. They can be served with any meal.
