Why Seafood I Great When You Have Guests

I was having company for dinner that night, 12 people, and I could feel the stress because I hadn't figured out what to make yet.

This was to be a special dinner to entertain and impress my husband's business partners. If everything wasn't perfect, he could miss out on this great opportunity and then we wouldn't be able to afford a new home.

I pictured the layout of all of the rooms with the vision of my plans for each one. I scoured the cookbook for any ideas that I thought would make an elegant presentation, but everything I saw seemed to be cheap and mundane, so I started to worry.

If I tried to serve something like roast or meatloaf to these guys, we'd all of a sudden be living a life of poverty on our own. Flipping a few more pages, it finally hit me. I needed to look at the seafood recipes. Seafood is always so swank, and would be the perfect thing to serve.

There was a fresh fish market relatively close by. It had endless choices. Because 'take-out' wasn't an option, I decided to go wit hseafood for the amazing and tsaty dish that I needed. My eyes crossed as I studued page after page of options.

I had decided to do a fish recipe, something like cod, haddock, Chilean sea bass or even Red snapper. I imagined I could be on one of those top cooking shows.

It goes without saying that I could have made something based with lobster. However, the crab based dishes really grabbed my attention. I could create something that would pop, and that could mimic the experience of eating at a fancy restaurant, or allude to the idea that this gig was catered. I am really pleased that I opted for a seafood recipe!

That night was a turning point. It was the very best dinner party we ever had. If not for the food, we could not have made the deal that boosted my husband's income to six figures. I give credit to those seafood recipes for saving our life and securing our future.
