Healthy Chicken Salsa Recipe

'Salsa' is a Spanish word for sauce. In Mexico, it refers to sauces that are used as ingredients for a variety of dishes and as condiments. A salsa recipe is usually spicy due to the predominance of hot chili peppers in the ingredients. Salsa is a spicy sauce of chopped vegetables, cooked or uncooked, sometimes fruits added; made especially with tomatoes, onions or hot chili peppers as they are the chief ingredients. 'Salsa' also means a form of Latin-American dance music.

Salsa recipe is basically Mexican, originally intended to be made with spices. Quality spices are mostly available in Java, Borneo, India, Thailand, South America and some other tropical countries and the people in these countries love to have intensively strong spicy foods. Here is the chicken salsa recipe. The ingredients required are - 2 chicken breasts 3 jalapeno peppers, sliced 6 small black olives 3 - 4 red ripe tomatoes 2 cloves of garlic 1 Anaheim green chilli, seeded out and sliced 2 onions, cleaned and mashed 4 oz canned chopped green chilies 12 black olives 2 Tablespoon lime juice Salt and pepper to taste

Here is how the chicken salsa recipe is to be ready. Scorch the tomatoes over a gas grill for a couple of moments, turning them until the peel blisters. Peel off the seeds and remove the green stem.

Put garlic, cilantro, onions and jalapenos in the bowl of the food processer and chop for a few seconds, add all the remaining ingredients excluding the olives and peppers and process the ingredients till you get the desired texture and then add salt and pepper as per your taste. Keep it ready for the next process. (If you do not like olives and peppers, do not use them).

Place the chicken breasts in three various thin foils, huge sufficient to hold them entirely, put the processed vegetable mix already prepared and kept ready on the chicken and place peppers and olives on top, wrap the foil around the chicken, fold the ends together tightly, put it in a glass baking dish and place it within the oven. Bake it at 400 degrees for 1 hour. Top it with mozzarella (optional) and put them on a bed of spinach leaves before serving.
