Here's how to do it:
Cover the lemons with water in a saucepan. Then bring it to the boil and let it simmer for one hour. Halve the lemons and remove the pips. Place them into a blender complete with skins, and blend until a paste is achieved.
Preheat the oven to 170C. Grease a 2lb tin with knob of butter and line with baking parchment. Beat the eggs and sugar together. Fold into the egg mix you've just made the flour, baking powder, lemon paste and of course the almonds....Put into a baking tin and bake for 45 minutes until the top is golden.
Keep aside, in the tin, to cool for around 10 mins. Then turn out on to a wire rack to cool completely.
