Method:

1. To begin, make the onion puree. To do this simply peel and chop 3 onions into small pieces and add to a small pan of boiling water. When you are happy that the onions are soft remove the pieces from the water and blend them into a puree.

2. Make the lentil puree in the same way - add to boiling water until soft and then blend.

3. Next, add a couple of teaspoons worth of fennel seeds to a heated pan over a high heat. Toast them over the heat until they start to sizzle. Then add in some oil and the rest of the onion. Fry them until the onions are a fantastic brown.

4. Now for the curry paste. In a small bowl, add in 4 teaspoons of the curry powder, 2 teaspoons of turmeric powder and 1 teaspoon of chili powder. Mix together with a small amount of water and then crush in the garlic cloves and grate some ginger in. Mix again until you have a smooth paste.

5. Add the curry paste to the saucepan and fry for a couple of minutes. Then cut the chicken breasts into mouth-sized chunks and add this to the saucepan, stirring well.

6. Spoon in the mango chutney and then pour on the pineapple juice - stir the mixture well.

7. In a separate bowl mix together the onion and lentil puree, add in 2 tablespoons full of tomato puree and stir in all the yoghurt.

8. Add the chicken stock to the saucepan and turn up the heat bringing it to a simmer. Pour in the yoghurt mixture and leave for around 15 minutes, stirring every few minutes.

9. After 15-20 minutes add 2 teaspoons full of garam masala. Give it a final really good stir and give it another couple of minutes on the heat.

10. Serve on warm plates with rice and naan bread, and garnish with roughly chopped coriander leaves.

Recipe For Deep Fried Pickles

The coating for this is got some kick to it, even though it could be toned up or down according to taste. I have tried many iterations of the recipe and this is the one I prefer. Also, I have included the recipe for an awesome dipping sauce!

Deep-fried Pickles

1/4 cup milk

2 eggs

1 cup bread crumbs

1/4 cup flour

1/4 grated Parmesan cheese

1/4 teaspoon garlic salt

1/4 teaspoon lemon pepper

1/4 teaspoon all season spice

1/4 teaspoon red pepper cayenne

10 Hamburger Chip pickles

1. Combine milk and egg in one bowl. Combine bread crumbs, Parmesan cheese, and all seasonings in a different bowl. Now using a third bowl, put in your flour.

2. Coat each pickle chip into the flour first, remove excess flour.

3. Dip each floured pickle in to the egg mixture followed by the bread crumb mixture.

Put on baking sheet coated with cooking spray. Bake at 400 degrees Fahrenheit for around Twenty or so minutes or until golden brown, turning once.

Dipping Sauce

* 2 eggs

* 1/2 teaspoon salt

* 1/2 lemon, juiced

* 2 cups vegetable oil

* 1/4 cup ketchup

* 2 tablespoons sweet relish

* 1 tablespoon horseradish

* 1 teaspoon Worcestershire sauce

* 1 teaspoon vinegar based hot sauce

* 2 tablespoons chopped scallions (green part only)

* 1/2 teaspoon cayenne pepper

* 1/2 teaspoon salt

* 1/2 lemon, juiced

In a blender - put in eggs, salt, and first half a lemons juice. Blend briefly to combine. While blending slowly, add oil in a slow, steady stream until well blended. Transfer to a non-metal bowl and add all remaining ingredients. Season with salt and pepper to taste.

4 chicken breasts, 6 tbsp plain natural yoghurt, 2 garlic cloves, 1 tsp garam masala, 1 lemon, tsp turmeric, 1 tbsp paprika, 3 cardamoms, tbsp salt, 1 tbsp ground chilli, 1 tbsp cumin, vegetable oil, olive oil, fresh coriander.

Pilau rice ingredients:

2 cups basmati rice, 1 onion, 1 clove of garlic, cinnamon stick, 2 cardamom pods, 1 tbsp fennel seeds, vegetable oil.

Method: Preparing the Chicken

1. Prepare the spices - crush the garlic into a bowl with the garam masala, turmeric, paprika and cumin. Remove the husk from the cardamoms and add this, as well as the chilli, cumin and salt. Mix together before pouring over the yoghurt.

2. Cut the lemon in half and squeeze the juice into the mixture. Stir together well.

3. Cut the chicken into small chunks and put into the bowl. Use your hands to completely cover the chicken pieces in your marinade.

1. Put a saucepan over a medium heat and add a tablespoon of olive oil. Finely chop the onion and once sufficiently hot, add to the pan and fry.

3. Once the water begins to boil allow it to do so for a further 5 minutes. After this time, put the lid on the saucepan, turn off the heat and allow it to settle for 20 minutes.

Method: Put the Curry Together

1. Pour a tablespoon of olive oil into a frying pan and place over a high heat. Once the pan is hot add the chicken and fry until you're happy the chicken has been cooked through.

2. Add the garam masala and coriander and fry for another 30 seconds.

3. Dish the rice onto 4 warm plates, and then add the chicken. I always recommend a slice of naan bread too, and why not push the boat out and have a beer to wash it down with!

Hemlock Reishi also stood out and spoke to me. Otherwise, I was concerned with making a decision, especially with picking and bringing them home. Things changed when I found Alexander Schwab's book: Mushrooming Without Fear, a Beginner's Guide to Collecting Safe and Delicious Mushrooms. This book is so easy to read and to follow. To begin to identify the mushrooms you find.

There are eight rules about picking mushrooms:
