Time it takes to cook these: 15 minutes, more or less
What you'll need to make these (serves four):
about 200 grams of manchego cheese eight corn tortillas plus a Mexican salsa (like verde or roja), or salsa fresca or a guacamole dip--something extra to slather on and give these some extra flavor
How to make them:
Start the whole thing by heating up a cast iron pan on the stove if you have one (otherwise a regular pan will do.
Slice the machego cheese into eight same size pieces.
Now prepare your favorite salsa (I've recommended a few above, in the ingredients list).
Warm the tortillas in the pan one by one, and then add cheese to your tortilla while it's in the pan, then fold the whole thing in half so that it looks like a semi-circle cheese sandwich...thingy, and just allow it to heat up enough so that the manchego melts and you're left with a delicious quesadilla.
