Italian Cooking At Its Best

By Maria Gedding

Italian cooking has somehow been thought of as using fattening food - this is not the case at all! The idea that Italian pasta will make you fat is not really true. In all honesty, a diet of Italian food, based on Mediterranean food is really fairly healthy and should help you to stay looking and feeling good, so long as you are aware of what Italian food to eat, and how to make it of course.

Of course if you are going to make rich, creamy sauces that use butter, like Alfredo sauce, in large amounts, then you are likely to put on weight. When sauces are prepared in the Mediterranean they use olive oil instead of the butter, so making the sauce a much healthier proposition.

If you want to make Italian food, then there are a few basic foods that you will need to keep in stock and these include a top quality Italian pasta, onions, garlic, olive oil, herbs (like oregano, parsley and basil), seafood, fish, and lean meat.

There are quite a few light Italian food recipes that you can make with very simple ingredients, here is an example of one that is really easy to make;

Pasta with fresh Tomato Sauce - you can use any type of pasta for this dish. Boil the pasta in water with salt added. Make sure that you don't overcook the pasta - it must be firm and tender.

To make the sauce chop an onion, garlic (use the amount you like), and fresh tomatoes (you could substitute these for a tin if you prefer). Put 1 tbspn of olive oil in a pan and add the garlic and onions, saute till soft. Add the tomatoes and cook till all the ingredients are mixed together well. Then add in the herbs you want - it really does not matter which ones you use, but you could try oregano, parsley or basil. Simply pour the sauce over your hot pasta, and if you want you could sprinkle over a small amount of parmesan cheese.

The is a nice basic, yet healthy, Italian dish that does not need to be accompanied with bread or anything else. You can change the type of pasta that you use as well as varying the herbs to ring the changes.
