Easy Chicken Recipes for Everyday Meals

When the work day is over and dinner time has arrived these time saving recipes can make meal planning fast and easy. Chicken is such a versatile ingredient and these simple recipes will have flavorful meals ready quickly and easily.

Store bought prepared chicken is a great quick meal item to have on hand or, if you prefer, simply cooking your own chicken and making extra for leftovers allows you to use these recipes and make quick dinner meals any day of the week. It's a real time-saver for the busy lifestyles we live and provides a healthy meal option with the addition of just a few fresh ingredients.

Each recipe makes 2 to 3 servings.

Cold Chicken Salad: You will need, 2 cups cooked chicken (cubed), 1/2 cup red bell pepper (diced), 1/2 cup yellow bell pepper (diced), 1/2 cup marinated artichoke hearts (roughly chopped - reserve the liquid), 1/2 cup low-fat mayonnaise or low-fat plain Greek yogurt, and 1 tbsp (or to taste) of the reserved liquid from the artichokes. In a bowl, combine cubed cooked chicken, red bell pepper, yellow bell pepper, and marinated artichoke hearts. In a separate bowl, combine mayonnaise or yogurt and reserved liquid from the artichokes. Add dressing to salad ingredients and toss well. Season with salt and pepper to taste. Serving Idea: Serve this simple salad scooped into Bibb lettuce leaves along with a side dish of warm couscous drizzled with a little olive oil and a squeeze of lemon juice.

Roasted Chicken with Citrus Coleslaw and Capers: You will need 2 cups of store bought roasted chicken (cut off the bone and cut into pieces), 1/4 cup lime juice, 1 tsp lime zest, 1 cup red bell pepper (medium dice), 2 scallions (thinly sliced on an angle), 3 cups packaged coleslaw mix, 2 cups mushrooms (sliced), capers, and olive oil. Prepare chicken and set aside. About an hour before serving time, combine lime juice, lime zest, bell peppers, scallions, and coleslaw in a bowl. Drizzle olive oil and salt and pepper to taste over ingredients and toss well. Allow mixture to marinate in the refrigerator for an hour, tossing occasionally. About twenty minutes before serving chicken, saute the sliced mushrooms in a little olive oil over medium heat until browned. Serving Idea: Place some of the cabbage mixture on each serving plate, top with roasted chicken and the sauteed mushrooms, then sprinkle with a few capers over the top. Serve chicken with warm rolls or garlic bread.

Chicken Salad with Apples and Ginger: You will need, 2 cups cooked chicken (cubed), 1 apple (cored and diced), 1/4 cup chopped walnuts, 1 tsp grated ginger, 1/2 cup low-fat sour cream, baby spinach leaves, and 4 red potatoes. Combine the chicken, apple, walnuts, ginger, and sour cream in a bowl and toss well. Serving Idea: Serve salad on a bed of baby spinach leaves drizzled with a little low-sodium soy sauce with a side dish made with red potatoes cut into chunks, steamed until tender, and tossed with olive oil, lemon juice, and salt and pepper.

Slow Cooker Recipes Are Alll Over The Place, So Why Can't I Find...

I have been on the quest for very good slow cooker recipes for a very long time, and I can not apparently find anything that i like.

I suppose it's on the grounds that I'm really picky concerning what I like to eat, and many of the recipes which i arrive upon have something in them that i just won't be able to stomach. I'm still searching though, and I hope to come up with a minimum of ten of them which are seriously beneficial and quite simple to toss together. You'll find just times when I am aware I have lots of work to perform and I would preferably spend my free time with my little girl than by cooking a meal.

Slow cooker recipes are all over the place, and you also can discover these with a easy search on the internet. The most typical kind tend to be recipes for stew, yet all of them seem to contain the identical ingredients. The difficulty that i have may be that I do not like cooked onions, and when a recipe calls for them, I won't make it. My life partner thinks I'm being ridiculous, but I simply can't eat these. What's Your Favorite Fair Food? Corn Dogs!

Our family's memories from the County Fair usually revolve around food. Once we step foot within those gates, we head straight to our favorite fair food, and that favorite food is corn dogs. There's nothing better in our book!

Even though we have tried to recreate those fair food memories by buying pre-packaged corn dogs, it's never quite the same. I don't know if it's the aromas or the taste, but regardless, the corn dogs you can get in the freezer section of the grocery store just don't offer the same appeal. That is how we came to develop our own version of deep fried corn dogs made right in our kitchen.

Are corn dogs nutritionally balanced? Some might argue that eating a corn dog is really ingesting useless calories and fat. However, when you make corn dogs at home you can control the ingredients, making this treat something you can make more nutritious, and delicious.

First of all there's the hot dog itself. Many years ago there was really only one or two hot dog brands to choose from, and they both had basically identical ingredients. Now when you walk up to the meat counter, you'll see a full array of hot dogs to choose from that can boggle the mind. If you don't eat beef or pork, there's turkey or chicken. There are even vegetarian style hot dogs. You can even get hot dogs stuffed with cheese or made with beer. The choices are endless so choose the hot dog that best suits your tastes and dietary preferences. A hot dog can actually be nutritious nowadays!

When it comes to the coating, this is where you can make some flavor changes, as well as healthier choices. You can choose whole wheat flour instead of white flour. You can cut back on the salt or use only the egg whites for the coating. Some pre-packaged corn dogs have added sugar, so that's certainly something you can eliminate. Add a few herbs and seasonings for a whole new flavor and added color.

You also get to choose the oil you use when you make your own corn dogs at home. When you are at the fair, you don't get to choose what oil they use or how long they've been using it. The oil you use should have what's called high "smoke points", in other words, it should be tolerant of high temperatures. Normally, you'll want a clean, clear refined oil such as refined sunflower or safflower oil. Many people also use peanut oil or corn oil. Be sure to read the label to check if it will work for high temperatures.

Be sure to get your oil up to the temperature recommended by your deep fryer. If you are using a heavy skillet to fry your corn dogs, be sure to use a proper thermometer and check that the oil gets up to about 375 degrees before beginning. Fry only a couple corn dogs at a time. Don't crowd your deep fryer or skillet or the oil will cool down too much and the corn dogs will be left to soak in the oil and you'll end up with soggy corn dogs. Drain your corn dogs well using absorbent paper or clean flour cloth towels that have been spread on a rack so air circulates underneath. Cool, and you'll be ready to dig in!

The State and County Fairs are long gone, but the delicious memories still linger. Treat your family to a re-creation of those flavors with yummy corn dogs made right in your kitchen. What a fun way to bring the taste of summer home!

Feeding a Super Bowl Crowd

The Super Bowl will be here before you know it. What will you serve to those crowds of screaming fans that will fill your living room? One of the best favors you can do for yourself is to keep it simple. Everyone will be focused on the TV during the game... they will not be interested in a sit down meal.

Set up your buffet table near enough to the television that no one will miss an exciting play. Hot food is perfect in the cold weather of February, so use your crock pots. Use crock pots to make pulled pork, chili, or stew. Swedish meatballs are simple to make in a crock pot. Set out a box of toothpicks and your guests can help themselves. You may want to make a pan of lasagna or a pot of spaghetti. Both can be assembled ahead of time and cooked quickly just before everyone arrives. Set the pans out on the buffet and let everyone dish up themselves. Buffalo chicken wings are easy to make ahead of time and reheat.

Serve plenty of chips and dip. Pour your favorite salsa over a block of cream cheese and set it out with some tortilla chips. Make deli sandwiches using French bread, baguettes or artisan loaves. Fill them with cold cuts and wrap them up for the fridge. Cut and serve whenever the table begins to look bare.

Use bread bowls for people to use for chili or even spaghetti. The bowl will taste as good as the filling. Make a bunch of baked potatoes or hot dogs and set them out with toppings. Your guests can design their own dog or potato by adding their favorites.

An appetizer only party is a great way to open up your options for food. You can serve everything from simple crackers and toppings to fancy appetizers like rumaki. It is completely up to you. Football fans will love anything wrapped in bacon. Try cooking cheese, shrimp, or sausage wrapped in bacon and served on a toothpick. While it probably will not be ht healthiest option, it will sure taste good!

Soups for an Easy Meal

There's a lot to love about a cup of delcious soup. Some people love the many flavors and textures, others the warmth and comfort. Lots of soups are so hearty they actually make a complete meal. Of course, in the summer heat, there is always the option of choosing from the cold soup favorites. Here are just a few of the basic types of soups you can create yourself.

When you look at soups, you can generally categorize them into either stock-based or non stock-based soups. Then there fruit soups as well, which generally do not use stock base. Stock based soups can include broth, bouillon, and consomm while non-stock based soups are typically your cream soups, purees, chowders, and bisques.

The majority of soup stocks start with a meat. The classic meat choices are commonly beef, lamb, turkey, veal, chicken, and fish. Lighter color meats such as poultry will create a light soup stock while the other darker meats will make a brown colored stock. To flavor the stock you'll typically add vegetables such as carrots, celery, and onion. These soups stocks are the basis for your family favorites including chicken soup, tomato soup, broths, and beef vegetable soups.

If you're making a rich thick puree or cream type soup you'll find they can be a perfect main course for a light dinner or afternoon luncheon. Create such classics as creamed corn or creamed broccoli, split pea, oyster or lobster bisque, bean or potato puree, clam chowder, and much more.

Then there are the fruit soups - these are delicious chilled soups that are perfect on a hot summer day. Refreshing varieties include cherry, honeydew melon, strawberry, peach, and cantaloupe. Some cold soup recipes will list fruit juices as a mixer while others use a vegetable-based soup stock in the recipe.

Nothing really compares to a delicious, well-made soup. Be sure to put the right finishing touch on your creamy soups with a simple garnish and serve it the appropriate dish, such as a nice covered soup dish for your bean or onion soup, or a nice flat round bowl for your cream soup. Cold Weather Comfort Foods - Top Of The List Is Chicken And Dumplings

If you ask any six people on the street to tell you their favorite comfort food, I believe at least one of those six people will say chicken and dumplings. Even though chicken soup and most every other one-pot style chicken dish may be right up there, for some reason chicken and dumplings just whispers "relax" gently in your ear.

Each person and each family has their own opinion of what a real chicken and dumplings meal should be. Depending on where you grew up and how your folks cooked would determine how you prefer making this chicken recipe. Let's examine a couple basic differences in some simple chicken and dumplings cooking methods.

Starting with the base for the recipe - the pot of chicken. Some folks swear that chicken and dumplings is no more than chicken soup with dumplings on top. This is one variety that is very well regarded, and very delicious, indeed. Simply taking your favorite chicken soup recipe and mixing up a batch of dumplings to drop on top is a great way to ensure your dish will be well loved by the whole family, since they already love your chicken soup!

Now we have the creamy chicken stew style of recipe. After you cook the chicken in a pot of water or broth, basically stewing it, you pick the meat off from the bones, shred or dice it, and return the meat to the pot. Then you add whatever you want to make it creamy - sour cream, milk, cream, or a combination. You can also add some chopped vegetables; anything you might in a stew. Once you bring the stew back up to a boil, you add the dumplings and cook until dumplings are done. You may have to add a bit of extra broth or water, but the end result is a thick, stew like dish with dumplings on top.

Another method is an oven baked chicken style of chicken and dumplings. Bake a cut up chicken in a Dutch oven until tender and remove it to the stove top. Then add your cut up vegetables if you like and some water or broth. Once the pot comes back to a boil, you can add your dumplings and cook as you desire. The chicken pieces are served whole with the veggies and dumplings on the side; similar to a pot roast style of dinner.

The subject of dumplings could be exhausting. We tend to take our dumplings quite seriously. However, some prefer to speed up the process and swear by the simple store bought biscuit, cut up and dropped into the chicken pot. Others prefer to whip up a simple dumpling with basic ingredients like flour, eggs, oil, salt, and ice water. You can even make dumplings with just flour, salt, and ice water. You can also make them a bit fancy with the addition of seasonings, cheese, and herbs.

The actual method for cooking your dumplings will vary according to the recipe. There is no one method that works better than another in every recipe. Some cooks swear by putting the lid back on the pot while others say the lid must remain off. Whatever works in your favorite chicken and dumplings recipes is all that really matters. You'll find the best method that works for your recipes, which is all any food lover wants anyway.

Perhaps the answer is choosing one part of the meal that can be made just like in the old days without too much trouble. How about some simple homemade biscuits?

Biscuits made from scratch are extremely kid-friendly and fuss-free! After throwing just a few simple ingredients into a bowl, you can get your kids involved by having them mix the dough with their hands. Because the dough doesn't need a lot of attention, even the most distracted little one will be done mixing before they lose their patience with the task!

Basic homemade biscuit recipes typically call for only about five ingredients: flour, salt, baking powder, shortening, and buttermilk or milk. You'll want to use a big, sturdy mixing bowl (unbreakable if you're having young kids mix the dough.) Once you or the kids measure everything into the bowl, you are ready to form the dough, then roll it out.

When making biscuits from scratch, you want to have a large surface to work on that's easy to reach. You will also need a little spare flour for rolling out the biscuit dough, and perhaps a rolling pin if you like, although pressing the dough out by hand is fine, too.

You can choose just about any circular object you want to cut out the biscuits. If you are involving the kids, be sure to choose something that's safe for them - like a clean soup can or such. You can use a real biscuit cutter, of course, if you have one. Even a regular water glass would work. Take your biscuit cutter, dip it in a little flour to keep the dough from sticking, push down on the dough, give a little twist, and pull back. Your biscuit should be all ready to plop out onto your baking sheet.

Remember to preheat your oven before you are done cutting out your biscuits. The oven should be fully preheated to a hot setting, probably around 450 degrees or so. Now that the biscuits are all cut out and arranged on a baking sheet, just pop them in the oven and watch them turn a wonderful golden brown.

Like most comfort foods, Tomato Gravy was developed out of necessity. In other words, we ate what we had on hand. When times were hard, we foraged in our pantries and gardens and came up with dinner. Big pots and skillets bubbled away on the stove, biscuits baked in the oven, and we sat down and ate as a family.

Perhaps that's why certain foods make us feel good. Even if we don't remember hard times like our parents or grandparents did, we sat at the table with these family folks eating the comfort foods from their youth, and it became our comfort food.

When it comes to varieties in recipes, Tomato Gravy is at the top of the list. There are as many variations as there are cooks. We make simple tomato gravy during the winter with whatever we have on hand - if I have canned diced tomatoes, that's what I use. If I have tomato sauce, I use that. If the garden is ripe, I pick tomatoes. If I have onion on hand, I might throw some in. The basic flour and oil thickened tomatoes recipe has a lot of room for tweaking.

Tomato Gravy starts with a good, golden roux. Yes, comfort foods were created by harvesting what we had and turning it into a filling, comforting meal for our hungry family. A Waffle Recipe Made Simple

Cooking isn't for everyone. Some people claim they can't make anything. But with a simple waffle recipe, you can make a yummy breakfast. There are so many mixes in boxes and ready-made frozen waffles. Isn't that just simpler?

Throwing a frozen waffle into the toaster is certainly easier than making one from scratch, but nothing beats a nice, fresh homemade kind. Most waffle recipes are simple and use ingredients that we usually have on hand. Before you start, make sure you actually do have all the ingredients, just in case. There is nothing worse than getting started only to find out half-way through that you are short one egg.

One simple recipe calls for flour, baking powder, sugar, salt, eggs, butter and milk. Start with the dry stuff. In a large bowl, combine 8 ounces of flour, 2 teaspoons of baking powder, 1 tablespoon of sugar and a pinch of salt. Stir these up until well mixed. Set aside.

Melt 2 ounces of butter in a saucepan or the microwave. In a separate bowl, mix the butter with cup of milk and 3 eggs. Stir until completely blended. Now add this to the larger bowl of dry ingredients and keep stirring until you get rid of all the lumps. Your batter is complete. Letting it sit for a few minutes will let it flavor. Now, turn on and heat up the waffle iron.

Once the iron has heated up, spray with a non stick cooking spray. Using a ladle, pour cup of the batter into the waffle iron. If a ladle is not handy, you can use a spoon. Close the iron and cook. Waffles are done when they are golden brown on both sides and can be removed easily. You will get about 8 waffles. You'll be able to adjust the yield by changing the recipe. For example, for 4 waffles, use half of each ingredient. For 16 waffles, use twice as much of each.

If you want to get creative, you can add blueberries, cinnamon, chocolate chips, chopped bananas or raisins. Actually, anything you can think of can go inside your batter! Just be creative and make sure that whatever extras you add are sliced or cut small enough to be bite size. Otherwise they may be too difficult to cook and to eat.

This recipe can also be adjusted to be more heart-healthy. Substitute the flour with wheat flour, use low fat butter and free range eggs.

That's all you have to do! This simple waffle recipe can be followed by just about anybody. One last thing: if you don't have a waffle Iron, no problem. This batter could be used to make pancakes as well. Just as yummy!
