Grilled Chicken Specialties

By Marcus Worthan

Grilling can be difficult if you do it only over the weekends. It needs so much of practice and experience to master the act of grilling. Properly cooking a chicken requires timely grilling. Let us discover some important techniques which might come at your service while grilling a chicken.

Generally a wait time is suggested because if one cuts the chicken into pieces just after it has been cooked then the chicken tends to loose its fluids. Fluids are necessary to retain the softness of the chicken. If a chicken is hard it may give your teeth a hard time.

Once you have placed your chicken on the grill, do not forget to time the grilling period. A chicken overcooked or undercooked is not anybody's choice. The easiest way to grill a chicken is on a low heat. It may approximately take 45 mins for the chicken to cook properly. The preparation time may vary depending upon the hotness of the grill.

If you have a grill with an iron gate, you should brush it with olive or vegetable oil before cooking. It prevents chicken from getting stuck on the grill. You can also try gas bib grill for a sure success. Top it with BBQ sauce, who knows, you might get the hearts of your friends in your pocket.

Do not let your chicken stick to the iron gates (in case you are using a grill with an iron gate), you should first brush it with olive or vegetable oil. BBQ sauce helps in adding a sweet flavor to your chicken. Believe it, it is a sure success.

For an exotic taste chicken does need a little bit of extra effort. To make your grilled chicken irresistible you can think of topping it with Bbq sauce. BBQ sauce gives an unearthing sweet taste which when combined with the delicious and soft grilled chicken make up a perfect combination. One of my favorite flavor is Apricot-Balsemic vinegar. It tends to suit taste of people of every age group. Even a combination with rosmary and caramelized lemons is not bad. It is a Mexican style, a mixture that helps in getting chicken an extraordinary sweet taste. For this you need to brine the chicken for around 12 hours. While placing it on the grill slip the slices of chopped rosemary and lemons beneath it. In this kind of preparation one need not wait to dig in the chicken after it has been cooked. Chicken is surely an exotic treat and to make your next barbeque party a sure hit, do not forget to try out these tips.

Discovering the Joy of Cooking

By Alice Sy

People say that the surest way that a woman will get to a man's heart is through his stomach. That is true. In the course of history, no person has ever said no to food. Cooking is a universal favorite and it has done much to human being - livelihood, entertainment, etc. Indeed, the joy of cooking is undoubtable.

Cooking is described as the preparation of food for eating. Cooking is also considered the oldest and most needed craft that man has ever known. It involves the application of different methods, such as applying dry heat, use of heated liquids and fats, curing, pickling, and smoking.

The joy of cooking has been discovered by man a long time ago. The concept of cooking started even before fire and pottery was discovered and invented. Man has a need to survive. In order to survive, one has to eat. It is this physiological need that made man discover the importance of eating.

If you think that was creative, just imagine how creative man got upon the arrival of pottery. The joy of cooking became even more sophisticated. Different pots were made to cater to different types of cooking. Man also discovered that food cooked in several different ways, tasted differently too.

Over time, the joy of cooking became an art form, so much so that it became a profession and named it Culinary Arts. Many individuals have sought to study this profession, studied the art of cooking and came up with its different forms.

When pottery came into the picture, man was brought to heaven. Man started to discover how you can alter the taste and texture of certain foods when exposed to different cooking mechanism. The great taste, the rich flavor, and the amazing texture strengthened man's joy of cooking and making it into a profession.

There are five forms of cooking with the help of heat. They include cooking through liquid, like boiling, poaching, and stewing; cooking in fats and oil, or frying; coking by exposing to vapor, like steaming, poaching, and braising; exposing to dry heat, like baking, broiling, and roasting; and subjecting to hot oil or sauting. So, in whatever forms you may wish to cook, just feel the joy of cooking.

It is no wonder that many can't resist food. Cooking is perhaps one of the oldest studied and perfected art form. The joy of cooking lies in every single person which can either be the love for cooking or the love of appreciating the result of cooking.

Hot or Cold, Specialty Coffees Are Quickly Growing In Popularity

By Michael Stadneck

Specialty coffee is a matter of choice, not a beverage of chance. The definition of specialty coffee or gourmet coffee begins at the origin of coffee, the planting of a particular variety into a particular growing region of the world. Specialty coffee is distinguished by quality rather than volume. Therefore, higher grades of coffee have typically been grown on smaller farms using more natural methods of cultivation. Gourmet coffee is a booming business in the U.S. Just looks at the ubiquitous Starbucks, whose net revenues were up 22 percent in 2007 on sales of $7.8 billion. And now it appears that McDonald's is positioning itself to capture a piece of the specialty coffee market on a global scale.

Espresso coffee is all about hot water and coffee beans. But it's the way these two ingredients are put together that spells the success of this drink. Espresso coffee is prepared by a special extraction method which produces a very concentrated, strong coffee in a short amount of time. Softened water at a temperature of 90-95 Degrees C is forced through finely ground and specially roasted coffee at high pressure. Since the hot water is quickly forced through the fine grounds it usually only takes between 25 and 30 seconds to brew a cup of espresso.

Cappuccino is a delicious, luxurious coffee beverage that is enjoyed by coffee lovers the world over, combining creamy, frothy texture with distinctive espresso flavor and aroma. Cappuccino is named for the resemblance of its color to the robes of the monks of the Capuchin order. Cappuccino is a cup of espresso coffee with fresh milk and milk foam bubbles burst on the top of cup. The milk foam bubbles burst acts as the insulator and keep the heat of the coffee for a longer time.

A Cafe Latte is simply a fancy name for a cup of coffee with milk though. The milk is steamed and that is what gives it such a smooth and creamy taste that people tend to really enjoy. A Latte is the way that most Americans prefer their espresso, and is quite easy to prepare. Start with a single shot of espresso in a 6-8 ounce cup. A latte is as per usual smaller in rate than a cappuccino and has a smaller aerate layer than a cappuccino.

A Mocha or mochaccino is an espresso and steamed milk mixed with chocolate and served with whipped cream on top. Despite being chocolate flavored, these are not terribly sweet. If you don't want to taste the espresso, ask for flavor syrup or sugar to be added, or try one of the other mocha drinks instead.

A Cafe Americano is simply an Italian espresso that has been diluted with a little extra water to soften the espresso flavor. A similar beverage is referred to as caffe lungo. Or as some Europeans refer to it as the watered down drink for those sissy Americans.

In addition to the hot drinks, there are a wide variety of delicious gourmet iced coffee drinks as well. If you're looking for one of those milkshake looking drinks, you might want to try a mocha frappuccino, which is basically a cold mochaccino with more calories.

The reawakened craze in coffee shops, kiosks and coffee carts can be confusing with menu boards listing numerous gourmet treats in various sizes. Baristas move with lightning speed from espresso machine to flavorings to steaming milk to counter with the talent of circus jugglers. Ordering your first latte takes a lot of courage, but once you get over the initial fear factor, you will be hooked for life.

Yema Balls Recipe

yema balls

Ingredients :

1-1/2 c. of sweetened condensed milk
2 c. of powdered full cream milk
1 50-g. pack of coconut cream powder
1 egg yolk
1 tbsp. of butter, softened
a cup of white sugar
small paper cups (bottom should be 1-inch in diameter)

Cooking procedure :

Pour the condensed milk into a small saucepan. Set the stove to medium and heat gently. Do not boil.

Beat the egg yolk in a bowl. Pour in the half of the heated condensed milk into the bowl and stir to blend in the egg yolk. Add the coconut cream and stir until smooth. Pour the egg-milk-coconut cream mixture into the saucepan and continue cooking. Stir, scraping the sides and bottom of the pan to prevent scorching. When the mixture thickens a bit, turn off the heat and cool for about 5 minutes.

Place the powdered milk in a large mixing bowl. Pour in the egg-milk-coconut cream mixture. Add the softened butter. Stir until smooth. Cover the bowl with cling wrap and chill for about 45 minutes. After chilling, mixture will thicken and shaping will be easier.

Place the white sugar in a wide shallow bowl.

Using two teaspoons, form the yema mixture into balls. They won’t look like perfect balls at this point. You will shape them later with your hands. Drop each ball onto the white sugar. Using you hands, roll it gently on the sugar then shape them into balls. Drop gently into a paper cup. Repeat for the remaining mixture.
