You Will Just Love Your Welsh Cookies

Welsh cookies are quite popular lately, thanks to presidential candidate Romney. This traditional Welsh recipe can be found in numerous variations, but the one thing it is so special about it is the fact it is baked on the pan, not in the oven. It really looks as a combination of a small pancake and a regular cookie. Taste great for breakfast, hot or cold.

It would be ideal to have a temperature controlled griddle for making Welsh cookies, but your nonstick skillet will do the job. In any case, the temperature should be around one hundred and sixty degrees, and you should be very careful not to burn your cakes. They should become golden brown.

Every traditional recipe, and you will find a whole lot of them, contain a few basic ingredients. Regular flour and baking powder, and some baking soda, can be replaced with self raising flour, of course. In some recipes they use added baking powder anyway, to get fluffier cakes. Other traditional ingredients are raisins, currants, nutmeg, cinnamon, sugar, butter and eggs.

Welsh cookies are traditionally round shaped. You can make all other forms as well, of course. The dough should be rolled out to be at least one half inch thick, but not thicker than one inch, it's up to your taste. Too thin dough is easily burned, and too thick cannot be baked properly. Your cakes should be nicely golden brown.

Traditionally, people put raisins and currants in the mixture. You can also add grated apples or pears, your favorite berries or some other fresh fruits, finely chopped. Fresh fruits will add moisture, and your cakes will stay longer fresh. Besides, they will be even tastier this way. Dried fruits, for example apricots, can also be added.

One traditional recipe contains four hundred grams of flour, appropriate amount of baking powder and a little bit of baking soda, one hundred grams of currants, one egg, a pinch of salt, one hundred and fifty grams of sugar, some nutmeg and a little bit of milk. Original recipe contains one hundred and twenty grams of lard and the same amount of butter, but you can use only butter instead.

You should prepare your dough just like you would prepare a pie crust, but a little bit moister. It means you should mix dry ingredients with the fat ones, until you get crumbs, and add egg and currants with as much milk as you need. You don't have to keep the dough in the freezer, but you can save it there for a day or two.

You could also freeze the dough and use it when you need. In any case, you should roll it out and bake your small cakes on a temperature controlled griddle or a nonstick skillet on both sides, until golden brown. Make sure not to burn them, and in just a few minutes you will have tasty little desserts you will simply love.

These lovely Welsh cookies are widely popular thanks to their great taste. Try the original recipe, and then you can add your favorite spices to it, according to your own taste. It is not advisable to put chocolate in the mixture, but chocolate cream will taste great with both hot and cold desserts.

Popular And Tasty Welsh Cakes

Welsh cakes are traditional desserts in Wales, but are prepared in other parts of the UK as well. These cakes are often called bake stones or Pics. Originally, they were called pice bach or reisen radells. In any case, they are really a perfect choice for a tasty little breakfast you will certainly enjoy.

They taste just great as they are, just dust a little iced sugar on them. In some parts, people usually serve them with butter and jam, and you can spread both on your tasty little pancake like cake. They always contain flour, sugar and butter, with the addition of raisins, currants and aromatic spices such as nutmeg or cinnamon. Traditionally baked on a cast iron griddle, they can also be prepared on a thicker frying pan.

Apple Dragon variation is very moist, because it contains grated apples. Jam split is served split, spread with jam. There are so many variations already, but you can also design your own, using your favorite spices and adding different dried or fresh fruits in a mixture.

So, when you want to prepare traditional Welsh cakes, you will need 400 grams of flour, self raising or with baking powder added, 120 grams of lard and 120 grams of butter, 150 grams of sugar and 100 grams of currants. You will also need a little bit of salt and one egg, some milk and nutmeg and cinnamon. You can also add your favorite spices.

The general principle is to mix the flour and dry spices with the fat, in one large mixing bowl. When the mixture forms crumbs, add all other ingredients, except milk. The mixture should be a little moister than a pie crust. You should add appropriate amount of milk until it becomes like that.

When you roll out your pastry up to one inch thick, cut it in round forms, but you can cut it in other forms if you want. Your thick frying pan should be very slightly greased only, and quite hot. Cakes should be baked on both sides, until golden brown. Dust each with iced sugar and serve as they are, or with butter and jam.

Another version contains only butter instead of a mixture of butter and lard, and two eggs instead of one, but it is very similar to the first one. Some use more spices, and some use more baking powder. When you use more baking powder, the cakes are much thicker and lighter. The important thing is to use thicker pan, and you will easily make perfect desserts.

One traditional recipe called Piceary moen uses more baking powder mixed with regular flour, more salt and less sugar. Most variations contain nutmeg, but you will find more cinnamon in some, or even coriander, ginger, vanilla or some other spices. Dried and fresh fruits are also quite popular, and all kinds of berries can be used as well.

Welsh cakes are easy to prepare and very tasty. They can be served hot or cold, and if you add some fresh fruits in the mixture, they will be even tastier. Although this cake is usually served dusted with sugar, with jam and butter, you won't make a mistake if you serve it with your favorite cream instead.
